I wondered this myself and made an arrowhead from copper and one from iron. There was no difference, either in the arrowheads or in the arrows made from them. In R32 they simply say "Arrowheads" or "Arrow". However I am inexperienced at collecting ingame data and do not know if there is another way of finding out this information other than just reading the name of the item in my bag and reading ingame tooltips.
